Most likely it's referring to the electric generators that converts the heat (or some other form of energy) of the main Minovsky reactor into electricity.
The manual says it has one in the Core Fighter, one in the back pack, and on the legs. I highly doubt there's a whole nuclear reactor in each of those.

Commercial nuclear reactors in real life apparently can also have multiple generators each. These are also important because the electric output rating of the reactor is measured by the output of those steam generators.

In our Technology article (which for for UC), we also have the Generator as an entry and describes it as "A device which converts the energy of a mobile suit's thermonuclear reactor into electrical power." I don't know enough about UC tech first hand to know how accurate that description is but it would make sense based on how the RG RX-78-2 Gundam 2.0 manual seems to be describing it as well as how generators are described for real life reactors in general.

There isn't enough animators in the industry versus the amount of anime projects out there so as a result episode counts have dropped a lot for anime, Its not just Gundam, a lot of anime now run on like one cour.
Standards are also higher now, stuff like stock animations which uses to be very common are now a lot more rarer. In addition, if you look at the gap between TV anime vs theatrical anime quality back in the 80s and 90s, it was huge. There is still a gap today of course but it's not as much as it used to be.
Mecha as a genre in anime is also not as popular than it used to be. Not a problem for Gundam per say as its the most well known IP in the genre and it being a merchandise powerhouse helps but they probably not want to take risks and shorter lengths will help that.
IBO and 00 keep me going.

Gundam Bael's Cockpit
Bael's Cockpit. Nothing more OG than this I suppose for Gundams as it's untouched for centuries. This one is interesting as it's not like the almost standing of the CGS MW but it's not a traditional 90 degree angle seat either.
The angle appears to be slightly different. The CGS Mobile Worker angle rotates backwards angle a little bit compared to Barbatos' which appears to be more straight. But it's the same seat.

Sidenote, CGS Mobile Worker's Cockpit is the only one that stands. Gjallahorn's and Union's Mobile Workers all use traditional seats.
As for why they didn't switch them out, I don't know of any stated reason. But if I were to guess, it's probably because Mikazuki is used to it. More of a don't break it if it isn't broken thing since it never appeared to hamper his piloting. Mikazuki's limbs also continue to work when he is connected to Barbatos's AV in Season 2 so that is not an issue either. Tekkadan probably didn't have any extra seat AV cockpits units to spare for most of Season 1 and Mika probably fine with it so they just decided to leave it.
Gundam Vidar's Cockpit:
This one just adopts the Graze's cockpit unit and then added the Alaya-Vijnana Type E system.
Barbatos uses the cockpit system that that is almost standing that you described in this topic because Tekkadan took it from the CGS Mobile Worker's cockpit. To my knowledge so far, it is the only one that adopts it.
Barbatos' Cockpit:
Basically when CGS found Barbatos many years ago, it was missing its original cockpit. So when Tekkadan had to launch Barbatos after Gjallahorn attacked them, they had to use whatever they had, which was the CGS Mobile Worker cockpit. Mikazuki/Tekkadan just kept using this system thereafter.
Tekkadan's Gundam Gusion Rebake does not use this system and that one appears to be taken from the Man Rodi's system.

The mobile worker cockpits have that adjustable angle thing, because they don't have much space to begin with so have to be almost standing. Barbatos adopts that cockpit because its OG cockpit was already missing when CGS found it.
However Ryusei-Go and Gundam Gusion Rebake cockpits (pictured below) adopts full seats that were taken from Man Rodis.

Zeon won in the sense that they got their independence and control space but they didn't take over Earth or anything. They do not rule over the entirely of humankind. It's a big victory but not a complete victory. Definitely not like say the Allies in WWII or anything like that.
They sit down. Personally they never look like they were standing to me but as mentioned, yea they lean forward a lot.
Barbatos really needs one.
