Try the HG RX-78-2 Revive or HG Char's Zaku II Revive
I’d recommend starting with one of the entry-grade kits, but after that just go for whatever looks the coolest to you!
The obvious answer is the Entry Grade RX-78-2 or some of the Revive era UC kits like the Mk. II or the Guncannon.
There's also a new Zaku II coming with the Char Commander's variant already released. The Zaku isn't quite as simple as the above kits, but it's a high grade and not a particularly complex one that will give you an iconic suit.
The original Zeon aquatic suits from MSG are generally still widely available and, while they're pretty dated, that makes them pretty simple.
It's technically not UC but people rave about the HGBF GM/GM. Alternately there's the GM or Gundam Ground Types if you're looking for Federation grunts.
I'm not a 1/100 guy, but I've heard good things about the RE:100 Zaku Kai as well as the Master Grade GM Sniper II and the Gundam: The Origin RX-78-2.
Overall, Bandai does make it very easy to get a good straight-built kit, so, while these are a few suggestions of well regarded kits that aren't too crazy, the majority of gunpla are fairly accessible as long as you don't expect to be designing custom tournament winning kits right off the bat.
The build burning is a good kit although its really pricey
@JoeyCan I never build it because it it's rarely in stock and the design never spoke to me, but I'm given to understand that the articulation and the amount of stuff in the box for its original price was pretty spectacular. I'm a sucker for Build Fighters in general, but, while it had its fair share of gimmick kits and kits held back by old molds, when HGBF hit, it hit hard.
