This may sound dumb but how do we know which gundam universe is canon cause apparently gundam wing ain’t canon

The Gundam franchise is not one big canon each non UC show is set in its own universe and is therefore canon only to it's independent universe

They’re all canon to their respective universes...
This issue was all about the franchise and licensing which came up a long time ago. So far til now I guess Sunrise or Bandai nv listed which cannon are and arent.
What I know is, you can say canon to the original or any episodes if the plot setting / character under the origin producer, lets say Sunrise or anybody related to them.
I used to hear, some folks know how to differ it through the material colors as code……but I'm unclear abt it.
If by canon you mean the original series, the Universal Century. The Alternate Universes can be canon WITHIN their universe, but not any other. So no Exia VS Wing Gundam.
Take Transformers for example: Generation 1 (G1) is considered THE canon Transformers series by many fans. No other series (Unicron Trilogy, Bayverse, etc., etc.) will meet their expectations like G1. They're called Geewunners by the rest of the community.

Only Gundams that take place in the UC timeline. Everything else is canon to their timeline but not the main. Basically Gundam, Zeta, Double Zeta, F91, 8th team, thunderbolt etc.
